Mâche... what do I do?

We have this extra-large mâche growing in my garden. Tonight I attempted to make it into a salad with goat-cheese toasts, blueberries and strawberries, since I know mâche is bitter.

Apparently, large, overgrown mâche (we're talking leaves ten inches long here) is even more astringent and bitter than the normal two-inch kind.

What can I do with it? We have more... I don't want to waste it.
