I love those restaurant euphemisms!

An article about eating/restaurants in the WSJ for 12/26/02 lists menu items from 3 restaurants. Two are fish "poached in oil", one is "poached in butter". I suspect "poached" *actually* means "deep fried without any coating". Anyone else have any knowledge of this?
