how long will goose fat "keep"?

magnolia | May 10, 2001 05:22 AM

A few months ago, I needed some goosefat for a winter recipe but it seems that the fat that cooks one's goose comes in a vat not a thimble. So I have a lot left, and keep forgetting about it when the opportunity to use it (instead of butter I guess) arises. I wonder how long it will keep ? Will I know when it goes off (and/or will it become unsafe to eat)? I'm keeping it in the fridge though I don't even know if that makes a diff...
Thanks!
