How long before avocado mousse discolors?

I'm going to take the endive with avocado mousse and smoked trout from this January's Martha to my mom's house on Christmas. The avocado is just pulsed with lemon juice, then piped (I might be lazy and spoon) into the endive. How soon ahead can I do this? Should I transport the mousse in a bowl covered with plastic wrap and fix it there? Has anyone tried this recipe? Thanks.
