Lobster Ravioli - Cheese or no cheese?

Ok so I know Italians don't typically pair seafood with cheese, but I'm searching for a great Lobster Ravioli recipe for New Year's Eve and it's seems most of them have either ricotta or marscapone. What do you guys think? Do I avoid the cheese or go for it? Do you have an amazing recipe you want to share?

I'm thinking of doing a Lobster Bisque style sauce.... with a chive oil to freshen it up? Maybe with some leeks or chanterelle mushrooms...

Looking for a fancy sit down dinner party recipe.
