Lion's head to head comparison

Just tried the lion's head meatballs at Shanghai Gate. It's tender, the meat finely chopped, the sauce delicate. However, they seem to use a lower proportion of fatty pork in the mix, and the resulting texture isn't as succulent and smooth as that of Wing's Kitchen. Wing's version had a richer, sweeter sauce that's less subtle, but I'd go with their lion's head by a slight margin.
