How to make these leftovers taste like . . . not leftovers?

Well, I've got a couple cooked chicken leg&thighs, along with roasted carrots, onions, potatoes, and celery, spiced with herbes de provence, salt, and pepper.

What would you do to give these leftovers a makeover for a second dinner that doesn't taste like, well, leftovers?
