My grilled vegetable ratatouille last night made boatloads. I don't normally save grilled zucchini or eggplant as it seems to get "weepy" but I have so much I thought it's worth a try. I grilled red onion, red pepper, eggplant, zucchini, and tomatoes. They are mixed and chopped in about 3/4" pieces. Any ideas?
I was thinking a grilled vegetable lasagna. Any ideas, links, recipes? Thanks
