Hey all -
Fantastic b-day dinner at Le Cheval (first time for me) in Oakland - wanted to query any that have done the 7 Courses of Meat (not to be missed) on the first course - a plate of thinly sliced steak, poached/blanched in lime?/lemon? juice and covered with ground peanuts, cilantro, sliced onions and more citrus...fantastic and exotic, i do want to try to recreate this, but can't remember the name of the dish to research.
Any Vietnamese specialists out there? And what's more, is there a significant difference between North/South Viet cooking?
