It doesn't work in my tiny kitchen to be making latkes during the party, pre-made is truly my best option. If I make them the day of, how long can they sit out on the counter? Is it better to make the day before and put them in the fridge? Mom used to make them way ahead of time and freeze them, then pop them in a hot oven and they crisped up. BTW, onions just aren't what they used to be -- I have to use so much more to get any flavor!
