I received an early X-mas gift of a pasta roller attachment for my Kitchen Aid and it's been a revelation. I was never that big a pasta fan until now. Homemade noodles are like a different food entirely. Good thing I'm not on Atkins.
I'm going to make lasagne and I've read at least a dozen cookbooks with recipes for lasagne using homemade noodles, including Marcella Hazan. All say the noodles should be parboiled and most say the finished lasagne should be cooked about 10 or 15 minutes. But I've been surprised by how quickly homemade noodle cook and wonder if parboiling is really necessary. If the noodles haven't completely dried (or even if they have), won't they cook up just fine in about 15 or 20 minutes even without parboiling?
