Las Vegas Hounds, I need a little help

My husband and I will be spending 5 nights in LV in October. We'll be staying at Bellagio, and for 1 night, we'll have access to a rental car. So far, we want to try Aqua (that lobster pot pie has me very interested) and Emeril's at MGM. So, that's 2 fish oriented dinners, and I need help with the other 3. Enough fish already!

We like Italian food, but I haven't found very many recs here, or anywhere, for good Italian in LV. I'm considering Canaletto at the Venetian, but are there any other Italian restaurants that I need to take a look at? I've heard of Piero's (off strip location). Is it good? Do any other recs leap to mind? Actually, can anyone tell me whether or not Canaletto is good?

Also, one night, we'll go downtown for the Freemont
Street show, and I'd like to know if there are any "houndish" restaurants in that area. They wouldn't have to be fancy - just good food. With so many great restaurants in LV, I wouldn't want to "waste" a dinner just because I happen to be in a certain area for one evening.

I'm sure I may have other questions, but I really appreciate any help that you can give me on these questions.
