Lanzhou Handpulled Noodles in Gaithersburg - Report

They feature mainly two kinds of noodles here, knife-cut and hand-pulled. The pulled noodles are available in different thicknesses. In addition, the noodles can be ordered in soup, stir-fried, and a dry mix with a modicum of sauce, and then you stir everything together. You choose your meat topping.

Overall, my impression is that this place is too much like a Chipotle, with the meats sitting in cold bowls waiting to be added to your order. DO not expect succulence of any kind. A complete insult to Lanzhou la mian.

We ordered knife-cut dry mixed with brisket and also thick puled noodles with vegetables and tofu. The classic version, and what you will find mostly in Lanzhou, is pulled noodles in soup.

The knife-cut noodles were as dull as can be, and the brisket was just plain awful. This is a disaster compared to the real thing, and the sauce is too sweet. Of course you can always add chili oil to the mix on your own. But the sauce should not start out with so much sweetness.

The pulled noodles were much better, and the vegetables and large flat pieces of tofu were good and this time the chili oil had a fighting chance. I will have to go back for the pulled noodles in soup, though I will certainly not hurry back.
