Landrauchschinken by Olympic Provisions

Melanie Wong | Feb 7, 2017 11:40 PM

Perhaps the most memorable bite at the recent Good Food Awards in San Francisco was the Landrauchschinken or "Swiss Country Smoked Ham" made by Oregon's Olympic Provisions. Velvety texture, fruity smoke mingled with caramel notes, bold herbal accents, deep porcine richness and a fabulous fat layer that tasted like smoked butter. Yep, in a room filled with many gustatory treasures, Landrauchschinken managed to make my head spin .

We cure these loins for 18 days, soak them in burnt sugar, flavor them with a touch of juniper and rosemary and then smoke them over apple and hickory...
