This year I purchased a Berkshire (Japanese name: Kurobuta) ham from Berkshire Meats, conclusion: wow!
It was cooked at 200 degrees until it reached 120 degrees, then I turned up the oven to 375 degrees.
I made a wonderful Bourbon Glaze, then scored with ham in a diamond pattern. After brushing the ham with the glaze, it went in the oven until it reached 135 degrees (and the glaze was golden and bubbly, about 25 mins.); then it rested for 30 mins.
It looked absolutely beautiful and was BY FAR the best ham I have ever tasted. It had an elegant and rich ham flavor. The texture was so lusciously tender with an unusual buttery-quality to the meat, which put it in a league all its own.
