I got an ice-cream maker today, and for my first trial I decided to try to make kulfi -- the cardamom rosewater vaguely almond extracty pistachio light ice cream you can sometimes get at Indian restaurants.
I'm decently happy with the way the taste turned out, but somehow the texture doesn't seem quite like the kulfi I've had in restaurants.
Also, I don't know where to get rosewater, but my local grocery store does sell rosebuds. So I boiled some rosebud tea, cooled it down, then used that to simulate the rosewater flavour.
Does anyone have a recipe that they can share?
