Koi Palace's problem, or mine?

Once again we had excellent dim sum at Koi Palace when they opened at 9 this morning, yet we had the same problem we always do there: all the rice-wrapper dumplings were sticky. They stuck to the paper in the steamers, my chopsticks, my plate -- so the dumplings all fell apart and were a mess. None of my other favorite places (HKFL, Fook Yuen) has this problem.

So, why? Do others experience this? Or is it something about the time I go (are early-morning dumplings different) or the way I eat them (should I let them sit a bit? I usually dive in right away)?
