Knife Sharpening and Chef's Warehouse

Hounds, I need your help!

I am seeking a reliable knife sharpener. I used a couple of resources for our kitchen cutlery but wasn't impressed. The first resource supposedly sharpened a steeper bevel on our knives, saying that this was the technique employed by Japanese knife manufacturers. The second criticized the job done by the first, saying that the knives were almost ruined. In any event, now I have no confidence in either.

Also, I have a great resource for gourmet-type items. I stumbled upon this distributor when I could not find the type of olives in the Los Angeles area that I was seeking. The distributor is Chef's Warehouse and is located in New York. Granted, they are essentially a wholesaler but they will sell directly to the public. They specialize in a wide variety of condiments, deli meats, cheeses, olives, spices, etc. I have to order my olives in five kilo containers but I go through them!
