Okay, so if you followed my previous thread, I was going to buy my gf a knife for Xmas. Well, I opted against it. Alas, the searching and reading gave me the bug to upgrade my chef knife.
So, I'm wondering if people can weigh in on the following knives:
Shun Classic 10in. Chef Knife
Miyabi Kaizan 8in. Chef Knife
I'd like to keep it around $170 or so. I've held the Shun and I like the way it feels and the balance. I have not held the Miyabi. How does it compare?
I've read much about the debate between Shun and Tojiro. I guess I'm not totally convinced one way or another, but have read that the Tojiro handles can be a deal-breaker.
My nice chef knife is a 6in. Wusthof Ikon Blackwood. I like it, but want a bigger knife. I have a bigger chef knife, but it's a Wusthof Gourmet, and not that great.
Thoughts or other suggestions?
