Pasta recipe, 3½ to 4 cups AP flour, 4 large eggs, squirt of EVO, pinch of salt to hand knead 10 minutes.
Im working on ravioli with the above and wanted your suggestions on how thick/thin the dial setting should be.
Mario Batali, whom I respect, said it, should be thin enough to see through. But thats setting No. 8 which must be too thin to hold up in boiling water.
First Ravioli Ill be making, ricotta and spinach. After those Ill be moving on to meat, crab, lobster and whatever.
PS The KitchenAid machine is really great enabling one to use both hands.
