Using a kitchen torch to sear the edges of meat while cooking?

Part way down this article, they talk about holding a steak with tongs, and searing the edges. I did this the other day when i was making a tuna steak as well, since the sides had almost as much surface area as the top and bottom. But i also recently purchased a craftsman propane torch; Do you think i could use this to hit the sides while its in the pan cooking? And if so, do you have any advice for the best way to go about it?
