Last night I invented an enormously tasty dish out of what was lurking in the frig. I had some aging bacon and a bag of Trader Joe's cubed butternut squash. I chopped an onion, diced the bacon, and sauteed it all together with the squash until it was brown and tender (about 15 minutes). I added a dollop of maple syrup at the end and cooked it a minute more. It was even better for lunch today!
In retrospect I might have also added a dash of vinegar with the maple syrup to round out the flavors.This would be a great accompaniment to some grilled salmon or chicken. Of course you could also use a whole squash and cube it yourself.
