I love Rebecca Ruth Bourbon Balls. To me they are quintessential bourbon ball. A creamy center heady with Kentucky Bourbon enrobed by dark chocolate and topped off with a pecan. However, unless family ships them or you mail order them, they are impossible to find outside of Kentucky.
This year I decided to tackle our Bourbon Ball craving for the holidays head on...I went ahead and made my own, in the style of Rebecca Ruth! For reference, you can see what what they look like here:
It took a while to find the right recipe to create the filling (which is basically cream candy laced generously with Kentucky Bourbon). I hit upon a simple one of 1/2 cup creamed butter with 3 1/2 cups powdered sugar. Once these were combined I added 5 tablespoons of Knob Creek kentucky bourbon, which is 100% proof. One more mix to incoporate the bourbon and I placed in the fridge for one hour.
Once the hour was over, I made one inch balls with my hand, although some ended up bigger than others. I placed on waxed paper and I let them sit overnight in the fridge.
For the chocolate, I did not have enough Scharffenberger dark chocolate on hand, so I used what I had (about 1/3 of a box) and put 3/4 of a bag of Guittard semi sweet chips in the double boiler. I melted these together and once liquid, I started enrobing the bourbon balls.
Placed on wax paper, topped off with a pecan...back to the fridge for another hour. We ended up with a total of 29 bourbon balls
Well, I must say, for my first time out, we won't be ordering from Rebecca Ruth!
