A Jerusalem bagel is not a bagel, but is it a simit? In Istanbul the simit, which looks like a Jerusalem bagel, is the national breakfast/street food/snack. It looks a lot like a Jerusalem bagel, not like a New York/Montreal bagel. My curiosity about this was provoked recently when I walked into the kosher bagel shop in Zurich. They will put lox and cream cheese on a bagel for you in Zuirch, but that doesn't change the fact that they produce Jerusalem type bagels. Not New York type bagels.
Any mavens on this list who can confirm that Jerusalem bagels are derived from Istanbul/Balkan type bagels, not from New York/Montreal bagels?
Any mavens who can explain what makes a Jerusalem bagel taste so different from a New York/Montreal bagel? It has to be something more than just the shape.
