I have a can of Eden Organic Lentils in my cabinet I'd like to use tonight. It's already seasoned with onions and bay leaf. I'm trying to figure out a way to make it a bit more interesting, but I've never used these before so I'm a bit stumped. Plus, my frig is a bit bare at the moment.
I have tomatoes, arugula, celery, onion, shallots, 1 ear of corn (a bit on the old side but should be ok enough), a can of spinach, bell peppers, potatoes, lemons here (alas, no carrots), plus the usual (and unusual) array of spices and I grow fresh herbs in my yard (parsely, oregano, sage, rosemary, thyme, mint, chives, basil, lavender) and a few cheeses (soft and hard goat, gouda, parmesean, romano). I'm making veal cutlets for dinner - unadorned, just Milanese style.
