Jason Epstein hamburger recipe NY Times

About 1-2 years ago, Jason Epstein did a Sunday food column in which he recommended a very specific way of having the butcher grind chuck for a burger--it was ground twice, maybe once long and then short? Can't remember, can't find the article, which I clipped, can't find the article/recipe on the NY Times site. Any one know what he wrote, or can just recommend same? Thanks.
