Japanese restaurants -- Gourmet Guide updated

Perhaps having too much time on my hands, I've taken a crack at updating Eric Eto's translation of the "Gourmet Guide" from the Japanese weekly Japion. First posted here in 2002, it remains a handy reference. But some places have come, gone or changed names in the past couple of years, and many of the recommended dishes are new.

I just moved here in December, so this little project was a welcome crash course in New York Japanese dining. I learned, among other things, that there's a place that makes alligator Japanese-style. That's right: Natori in the East Village, which proudly serves up wani (alligator) shogayaki. I thought this might be a fanciful coinage akin to "spider roll," but was told over the phone that it's real gator, pan-fried with ginger. Anyone tried this dish? I'll be really disappointed if it tastes just like yakitori.

The inevitable suspicion about this kind of listing is that it exists mainly to boost advertisers and is thus a less than reliable guide for the rest of us. Japion runs ads for two or three dozen restaurants a week, and the Gourmet Guide does set apart those entries with color shading, but any favoritism beyond that isn't obvious. The current guide comprises more than 170 restaurants yet leaves out a couple of Manhattan advertisers and a half dozen more outside the city. If this is supposed to be an ad vehicle, someone here is not taking care of business.

The advertisers' man of the hour is the Mets' new shortstop, Kazuo Matsui. One restaurant has proclaimed "Kaz Day" and another is offering Mets tickets, hoping to cash in on the stateside debut of "Little Matsui" (and no, I don't think the "Little" refers to his spring batting average).

OK, on to the restaurants, but first the disclaimers and caveats:

-- Japion cast a wide net, but a few big ones got away. To name just one surprising omission: Sugiyama, the kaiseki place on West 55th, missed the cut. Teriyaki Boy and Daikichi outlets, meanwhile, are well represented. But the value of the guide lies more in the vast middle ground.

-- Not every restaurant name, as given in the guide, squares with the phone book or other references. Several outposts of the mysterious East empire, for example, seem to go by more than one name. To avoid wading too deep into this confusion, I left things mostly as they appeared in the newspaper, in some cases adding alternate names in parentheses.

-- The prices given here are a rough guide only and can't easily be used to compare restaurants. For example, sushi prices are given by the piece in some cases, for full meals in others. (Some prices have actually fallen since 2002, probably a reflection of hard times here and in Japan.)

In spite of all this, the Gourmet Guide offers a useful snapshot of the Manhattan Japanese dining scene and which places are cooking what. Since I've gotten loads of delicious tips from the New York boards in just a few short months, I hope others here will find this list helpful.
