Izakaya crawl in Vancouver and Chinese food near the airport

I'm going to be in Vancouver for three days in August and my husband is keen to do an izakaya crawl. I gather that Guu with Garlic, Kingyo and Zakkushi are all within walking distance of each other, and could be visited in a tapas-style crawl. So, my quesitions:

1. Do I need to make reservations? We would likely do this on a Monday or Tuesday night. If I reserve, how far apart should I space the reservations?

2. What are the must order items at each place?

3. Are there any other places to add to our tour that might be better? Should I forget about this idea and just stick with one place? (and if so, which one?)

Next up, I'm wondering about eating in Richmond: We arrive at YVR at 7pm Saturday night, and are staying at an airport hotel in Richmond. From reading the many threads about Chinese food and dim sum, I gather this is the place to be to find the best. Are the food markets an option on a Saturday night? Or, does anyone have a suggestion for something that is easily accessible to two hungry, jet lagged travelers?
