Italophiles, Help! How do you use Guanciale?

I went to Bieselle. I bought my pound of Guanciale. But now I'm wondering what to use it in other than an amatriciana or carbonara. Secondly, it smells a bit cheesy; should I cut off the rind or wash it with vinegar? The latino guys behind the counter were friendly but not much help with such esoteric questions...
