ISO recipes for preserving fresh bamboo

I've been taking advantage of the bamboo coming up all over the yard by harvesting the shoots. I froze a bunch after preparing them (the cooking and peeling), but I'd like to try a few other ways to preserve them. Does anyone have any good recipes to share? Something pickled or fermented? I've seen a few online but am curious to hear about what others here have done. Thanks!
