I have long wanted to cook skate at home after trying some really tasty restaurant style dishes that featured skate - grilled and banana wrapped Malaysian style, and one lightly breaded and fried with a light sauce. I have never cooked with skate so I asked the fishmonger in Brooklyn Chinatown to clean it up for me I was pleasantly surprised at how inexpensive they were: $0.99/lb. Now, I have over 4 lbs of cleaned, salted and peppered skate wings sitting in my fridge and ready to go - all I need is a recipe. Any fellow hounds have a tried and true, easy and tasty recipe that could use up all the skate I have? Thanks much!
