ISO Really Fantastic Carrot Cake Recipe

Our first wedding anniversary is coming up in a couple of weeks, and, since we didn't have a wedding cake, I thought I would make my husband a carrot cake in celebration of our first year (because it's his favorite flavor).

The thing is, I generally dislike carrot cake, because of all the extra chunky stuff that goes into it, but I've gotten carrot cake from a local restaurant that has a nice, consistent texture and has a stronger coconut flavor. It also has no nuts. It's pretty moist, so it may have pineapple in it as well....

Does anyone have a recipe that would match these parameters? I know that most Southern cakes have those ingredients, and I could generally eliminate the nuts, but I'm looking for a formula that creates a nice consistent texture.
