Help! Would be grateful for anyone who could tell me where in the Los Angeles area I could locate "preserved lemons," a bottled product frequently used in Moroccan recipes. I have dialed every Indian and North African reference in the Zagat provisions booklet, and Surfas, without success. Perhaps the phrase "preserved lemons" throws them?!?
This ingredient, a staple of tangine stews from Morocco, also called "msir," results from salting and curing lemons for at least 30 days, something like orange marmelade without the sugar. I would make some of the stuff myself if it were not so time-consuming.
