So, it's now 6 AM and I've been awake the last 4 hours trying to think of an Easter entree to make for my Mom, which has to contain the least amount of sodium. Obviously, ham is out. And the rest of the family dislikes lamb. I'm not much of a beef-eater, nor do I have much luck cooking it, although I was thinking of some type of beef roast ala slow cooker. Or a pork roast or tenderloin. Even chicken or turkey is difficult to find that has not been processed with salt!! Once I figure out the entree, the sides will come to mind with no problem!
Also, my Mom is diabetic, so any ideas for a sugar-free dessert would be welcomed!!
