I'm in the middle of holiday baking where I am using a bunch of yolks. As a result, I will have about 6-7 egg whites leftover. Any ideas what to do with these suckers?
So far, I am thinking about angel food cake, homemade marshmallows, almond financiers... but I could use some more ideas to work with.
Not interested in freezing for future use. I tried this with the last batch and ended up with useless freezer-burned junk. Nor am I a big lover of meringue.
