Specifically what I have on hand now: garlic/tomato/basil and feta/spinach sausages.
The first thing brought to mind is a tomato sauce/pasta type of thing, but I'm really not in the mood for something that heavy. In the freezer I have asparagus, brussels, sweet corn and green beans, hatch peppers - standard celery, bell pepper, onion, garlic, (apple sauce?), white wine in the fridge, any number of dried herbs in the pantry, as well as chicken broth, panko bread crumbs, long grain white rice and quinoa.
I simply have no cooking inspirations today. Seeking dinner ideas!!
