a new ice cream place opened last week. they have gelato and american ice cream(their term). the 2 flavors of gelato i tried were very good. the mango tasted like it was made with super ripe fruit. the bacio (hazelnut and chocolate) was plenty nutty tasting and not overly sweet, which is my biggest problem with most ice cream. i actually prefer edy's frozen yoghurts and light ice creams to most of the sweeter and more caloric ice creams i try in ice cream shops. but i digress...
and again... yesterday, with the help of my 'mad scientist' upstairs neighbor, i made almost instant strawberry ice cream using liquid nitrogen, which my neighbor buys at welding shops(supplying his own tank, of course). it was amazing, and very creamy. we mixed cream, milk, sugar, mashed strawbs and slowly he poured in the steaming liquid nitrogen. it evaporates, pulling the heat out of the mixture (apparently, there is no such thing, scientifically [according to my father, the physicist]as cooling; rather, there's just heat being removed. he added about 4 cups slowly, stirring madly and within a few minutes it was ice cream. while not something most of us can do easily, i thought it was fantastic, having never heard of such a thing before.......joan
