Huitlacoche at Zuzu in Napa.

Recent posts renewed my interest in Huitlacoche so I was happy to find "Corn Soup with Cuitlacoche" on the menu at Zuzu. The soup itself was a delicious corn chowder and the huitlacoche had a wonderful sweet musty taste. The down side was that the kernels of fungus were added at the end and hadn't been cooked into the soup. The only taste of the mushroom was in the (2) kernels themselves. I would have liked it better if the flavor had been throughout the soup. It's hard to complain though because it would have been excellent even without the smut. :)

This was my first time to Zuzu and I was thoroughly pleased. Everything was excellent. I'd also recommend the quail.
