How do hotels serve pineapple? [moved from the Manhattan board]

Off late, I've been attending a few conferences and often found the pineapple in the fruit tray very nice and sweet. Now, having lived in the NYC area for a few years, the pineapple we get is good but nothing compared to what you can get in some parts of the world

My suspicion is that hotel kitchens are leaving this pineapple in sugar & salt syrup for a while - salt so it's not that acidic and sugar to sweeten it up. Can someone confirm my suspicions?
