Hong Kong: Sichuan and sushi suggestions please

A few nights in Hong Kong, and I am looking for good, authentic, home-style Sichuan cooking. Nothing toned down. Da Ping Huo has been recommended, any thoughts? And if not there, where? Atmosphere matters not, food is the focus, and a Chinese-only menu is not a problem.
I'd also consider Hunanese.

And --- the very best beifang shuijiao in town (and/or hongyou shuijiao)? Daoshao mian? And the freshest, most well-prepared sushi (how much should I expect to spend?) too.

Some meals, of course, will be set aside for Cantonese as well --- but my Sichuan, sushi, and Chinese dough-product cravings must be assuaged first. Thanks in advance.
