Best ever homemade pumpkin and apple pie recipes with crust

Double Crust

2 1/2 cups 315g ap flour
2 1/2 sticks butter 230g
1/2 cup+2tbl sour cream
1 tsp salt
2 tsp sugar

Single crust
1 1/4 cup 157g ap flour
1 1/4 sticks 115g butter
1/4 cup +1 tbs sour cream
1/2 tsp salt
1 tsp sugar

Mix dry ingredients add box shredded butter mix in add sour cream form ball divide and roll into 2 discs
Refrigerate 2 hrs.
Roll into 2 crusts and place 1 in glass pan and trim. Place back in fridge and prepare filling.

Filling

6 medium apples sliced 11-22 cups
2 Tbsp lemon juice
1/4 flour
1/4 sugar
1/4 cup brown sugar
1 Tbsp cinnamon
1/4 tsp nutmeg, allspice, clove
1 Tbsp maple syrup
1 Tbsp butter
1 egg+1tbsp milk for egg wash
A bit of Sugar for top

Combine apples and lemon, toss in dry ingredients drizzle with syrup, mix pour into crust
Dot with cut up Tbsp butter, top with lattice, brush with egg wash sprinkle with sugar

Bake 400 20min
Reduce 375 35min
Cool 3hours

Pumpkin

1. 3 eggs+1 yolk
2. 1 cup packed br sugar 250gr
3. 1/2 tsp salt
4. 2 tsp cinnamon
5. 1 tsp ginger
6. 1 Tbsp corn starch
7. 1/8 tsp black pepper
8. 1/4 tsp nutmeg, clove,
9. 1/8 tsp cardamom
10. 1/8 tsp allspice
11. 1 tsp lemon
12. 2 cups pumpkin 450gr from fresh pie pumpkins
13. 1 1/4cups cream or milk
14. 2 tsp vanilla extract
15. 1/4 tsp almond extract

Cut pumpkin in half and remove/ scrape out seeds and stringy center. Place halves on parchment paper in pan.
Cook pumpkin at 450 for 30min,
Remove pumpkin skin, (will come right off).
Place pumpkin meat in food processor and process about 3 min until completely pureed.

Beat eggs then mix in sugar and salt plus spices and lemon juice then beat in cooked pumpkin and cream bake 425 15minutes then reduce to-350 for 45 minutes
Let cool 1 hour
