I’ve tried making homemade pasta twice now. Once I did it all by hand and it was super thick and when I tried to boil it it became a gluey mess.

So I went and got an actual pasta roller thinking that I hadn’t worked the dough enough or rolled it thin enough, in addition I didn’t think I’d let it rest.

Well I followed instructions And kneeled for 12 minutes. It seemed fine and rolled very well and cut into spaghetti easily. I put the noodles on a drying rack and now they are super fragile and crumble easily. This happened within minutes. I was under the impression that drying noodles was okay but this seems to be a big problem.

I’m beginning to believe I’ll never be able to make actual pasta.
