Thanks to everyone for joining in the nomination process for November’s Dish of the Month (DOTM). Lots of interesting ideas, some bridesmaids that will have to remain bridesmaids for yet another month, and a few new ideas that I hope will get some traction soon. Wikipedia tells us that a gougère, in French cuisine, is a baked savory choux pastry made of choux dough mixed with cheese. There are many variants. The cheese is commonly grated Gruyère, Comté, or Emmentaler, but there are many variants using other cheeses or other ingredients.
And because I am the laziest of the DOTM ladies, I will also use Wikipedia to tell you that moqueca is a Brazilian recipe based on fish or shrimp, palm kernel oil, coconut milk, tomatoes, onions, garlic, lime and coriander. It is slowly cooked in a terra cotta casserole. Moqueca can be made with prawns or a mix of boneless fish species, like small shark, swordfish, etc
