Holding shredded chicken

We own a small quick service Mexican restaurant. We're adding chicken to the menu. I want to serve shredded chicken but need to hold it in a steam table without drying it out. Still trying to find the optimal way of doing this. Holding in chicken broth makes it kind of squishy. Any suggestions or ideas? Would it hold better if it was in small chunks rather than shreds? TIA.
