Need to hold cinnamon roll dough for 3 days

We always have cinnamon rolls on Christmas but this year due to my work schedule and the way Christmas falls, I needed to prepare the dough ahead of time so I went ahead and mixed up the dough today and put it in the refrigerator. I've done a 3 day cold ferment on pizza dough before but I've never tried it with an enriched dough. Is there any difference? My plan is to shape the dough Monday night and refrigerate the shaped rolls overnight and then bake them on Christmas Day. Just curious as to whether anyone has any thoughts on whether an enriched dough would act differently from a lean dough.....
