High heat and Stainless, Le Creuset

The functional (for me) and aesthetic (for my fiancee(ok, functional for her, too)) prides and joys of our kitchen are the Le Creuset Dutch (French?) oven and the All-Clad stainless pans. The instructions for both admonish the owner not to use anything above medium heat.

So far, I've complied, and I've experienced no problems with either item. But I wonder...how bad would it really be? If it's that bad, then TV chefs, who frequently use high heat, must be ruining thousands of dollars worth of cookware every week! I'm wondering if "high" heat on my simple home gas stove isn't really all that high when you consider the higher-end stovetops that are available...
