I'm making korean short ribs for dinner tonight for my boyfriend (I'm stuck on a liquid diet for life, but am obsessed with cooking, haha). I love coming up with nightly meals for him, because cooking is so cathartic for me, and because I enjoy making delicious things for other people.
Anyway, I'm stuck when it comes to sides. He's on a fairly low-carb diet, and there are some things I have in mind to go with the ribs (fresh spring rolls, thai curry roasted veggies, sesame snow peas, peanut slaw...), but I feel like I've made those things fairly often to go with asian dishes, and I wanna try something new!
Any ideas for some interesting/different sides that involve mainly vegetables?
