Healthy bread - raising issue

RuHappy69 | Jan 19, 202004:14 PM     8

Help. I substituted garbanzo bean flour (1cup worth) from my normal recipe of 4 cups of white wheat bread - so 3 cups wheat and 1 cup garbanzo flour. Dough was proper consistency (sticky but not wet ) but while it did rise it was still heavy and dense. I used my normal vital wheat gluten and Xantham gum doses and the previous 4 cups of wheat rose just fine so what’s up??
