Hard Boiled Yolks In Cookie Recipe

There's a whole slew of Central and Eastern European cookie recipes that call for the addition of sieved hard-boiled egg yolks in the dough.

Does anyone know the reason for this? What does a hard boiled egg yolk do that an uncooked egg yolk does not?
