What Happened to my Glace de Viande?

I followed Jacques Pepin's advice in La Methode about storing little ice cube tray sized pieces in an unsealed bag in the fridge. He said they would turn rock hard and last forever. Instead, they turned moldy after only six weeks.

Can anyone tell me what I must have done wrong?
